How to preserve truffles or how to prepare them for tasting?

TRUFFLE PRESERVATION
Every type of truffle it has a time limit to be consumed after the harvest, spent
Over time, it could deteriorate and lose much of its flavor and aroma. Here's a helpful reminder:
– Tuber aestivum : 7-10gg
– Tuber melanosporum : 5-7gg
– Tuber uncinatum : 5-7gg
– Tuber brumale : 5-7gg
- Tuber borchi: 3-5 days
- Tuber Magnatum Pico: 2-4 days
The best way to preserve truffles is to place them in a glass jar with plenty of paper towels, both on top and bottom. Once closed, place it in the bottom half of the refrigerator, where vegetables usually go. The paper towels should be changed daily to prevent excessive moisture buildup. Truffles should always be stored UNCLEANED.
DO NOT store in rice or oil: in the first case the truffle will dry out after a few days and you will have difficulty finding it, while in the second case it will ferment, becoming inedible.
Some truffles can be frozen, but this is strongly discouraged as the formation of large water crystals inside will make them soft and tasteless.

TRUFFLE CLEANING
The truffle must be cleaned only before being consumed: the soil on the outside helps preserve it and slows down both weight loss and excessive moisture exchange.
When we're ready to eat our truffle, we'll take it out of the refrigerator about an hour beforehand and gently brush it with a little water. Caution: it shouldn't be washed under running water!
Once washed, it is very important to dry it carefully and not put it back in the refrigerator.
SLICED OR GRATED TRUFFLE?
Each type of truffle has its own way of being consumed, but to fully appreciate every nuance of its aroma and flavour, it is preferable to all types of truffles consumption raw.
Generally speaking, black truffles are best enjoyed grated, while white truffles are best eaten sliced, although the rule may vary depending on the specific dish. with which we pair our truffle.
To fully enjoy all the characteristics of our truffle, in any case we recommend that you use specific tools: for the slices a smooth blade truffle slicer of excellent quality, while for grating the ideal is a MicroPlano medium hole, very sharp.
